Even the caterers will come and beg for our own seafood fried rice. It’s superb. Seafood Fried rice is a very popular food in Nigeria, almost every one loves seafood fried rice in Nigeria. They prepares it at home, prepares it for different occasions. In Nigerian, seafood fried rice is a most in parties. This one is special and expensive and the method is different.

The ingredients you will be needing
- 1 kg of basmati rice
- 1 Lt of chicken stock
- 2Lt of water
- 3 table spoons of curry powder
- 1kg of green pepper and 1k of red pepper
- 1kg of yellow pepper
- 1kg of orange pepper
- 1kg pack of mixed frozen vegetables
- 1 president butter
- 2 cup spoon of vegetable oil, because you are going to add oil to the rice when you are par boiling it.
- 1 Handful of shredded fried chicken breast, 2 Handful of liver
- 2 Handful of spring onions
- seasoning cube to taste
- salt to taste
- 2 big size eggs
- Half of one medium calamari
- 15 Pieces of fresh prawns
Preparation for the ingredients
- Get a clean pot on fire
- pour your water
- pour your chicken stock
- Add 1 cooking spoon of vegetable oil
- Add your curry
- Add your seasoning cube to taste
- Add your salt to taste
- Cover it to boil
- Wash your rice and pour into the boiling water and par boiled the rice
- Once it’s ready, pour into a clean tray and spread it underneath a fan so that it can get cold and set aside
- cut the green pepper and set aside
- cut the red pepper and set aside
- cup your yellow pepper and set aside
- Cut the orange pepper and set aside
- Cut the spring onions and set aside
- Cut the chicken breast into long tiny pieces and stir fry it and set aside
- boil your liver and cut it and set asid
- wash your calamari and cut into cubes
- Add seasoning cube and salt to taste and stir fry it with a little butter and set aside
- Wash your fresh prawns and remove the head
- season it and stir fry it with a little butter and set aside
- Once you are done with all the preparations, then you can start the cooking process.

Method on How to Prepare Special seafood fried rice
- Get a clean fraying pan on fire, the one that can contain the rice and vegetables
- pour your vegetable oil
- Add your president butter
- Once it’s hot, add 2 handful of spring onions
- Add 2 handful of liver and allow it to fry
- pour your frozen vegetables into a clean seave and remove the ice, and pour into the the pan, and stir it very well, Allow it to fry a bit
- Add your yellow pepper and allow it to fry a bit
- Add your orange pepper and allow it to fry a bit
- Add your green pepper, and allow it to fry a bit. As you are adding the vegetables, you have to keep on stirring it so that it won’t get burnt
- Add your red pepper and allow it to fry a bit
- Add your shredded fried chicken breast and allow it to fry a bit
- once it’s well fried, then you can add your par boiled rice and mix very well
- Add seasoning cube to taste
- Add your salt to taste
- Cover it and reduce the heat for it to steam
- While the rice is on fire
- brake your 2 eggs and fry it scrambled fraying
- Once the rice is steamed, then you can pour the scrambled egg into it
- Pour your fried calamari
- pour your fried prawns
- Cover it to steam again
- Once it’s well steamed then your seafood fried rice is ready!!! You can serve it with any protein of your choice.
